Let your creativity flow with this basic vanilla birthday cake
Weigh off all the dry ingredients and weigh off all the wet ingredients into a separate bowl.
Add wet ingredients to dry ingredients and be careful not to over mix. If you over mix the batter you will end up with a dense cake.
Fold in 60ml fresh sparkling water to the batter, transfer into prepared baking tin and bake till skewer inserted comes out clean
Let rest for 10min before taking it out of its pan and letting it cool completely on a wire rack
In the meantime prepare the american style buttercream
Beat the vegan butter or marg till smooth and pale in colour
Slowly add your icing sugar beating well after each edition add coconut milk as needed to thin out the icing if it gets too thick.
Add your flavouring last!
To assemble your cake: slice the cake into 2 layers sandwich the layers together with buttercream and top the cake with buttercream, add any garnishes that suits your style!
