 2 Slices Toasted Sourdough
 Fresh rocket
 Sliced baby tomatoes
 1 Block of tofu (I bought some at the china shop N1 city)
 ¼ Finally cut onion, fried in veg oil
 pinch of turmeric for colour
 Pink salt to taste
 fresh ground pepper to taste
 ¼ tsp Black Salt
 ¼ tsp Cumin
 ½ tsp Dijon mustard
 1 tbsp Bwell Tangy Mayo

Get all the spices and accompaniments ready.

Take the Tofu and squeeze out excess water, you can use paper towel between 2 plates for a few min.

Use a fork to break tofu apart in a bowl

Heat a frying pan, add some veg oil, fry the onions till soft and translucent. Add the tofu fry gently, add all the spices and continue frying 2min, add the mustard and mayo remove from heat!

Plate your tofu scramble on your toasted sourdough top with rocket and baby tomatoes.

Perhaps more salt and black pepper and an extra dollop of bwell Tangy Mayo!
